Vinaigrette recipe (Salad)
Place the potatoes, beet and carrot in a saucepan with just enough water to cover. Bring to a boil, and cook until tender. Remove from heat, drain and cool slightly.
Peel the potatoes, beet and carrot and cut into cubes.
Place everything in a large bowl, and mix in the peeled and cubed onion and pickled cucumber. Add oil and salt to individual servings.
