Kuku Sabzi recipe (Lunch)

YOU'LL NEED
Yield: 4 servings

6   eggs
1 teaspoon baking poweder
1 teaspoon Persian all spice
1 teaspoon salt
¼ teaspoons freshly ground pepper
2   gloves garlic, crushed
1 cup chopped chives
1 cup chopped fresh parsley leaves
1 cup chopped fresh coriander leaves
1 cup chopped fresh dill
1 tablespoon flour
½ cups olive oil

Instructions

Persian all spice : 2 tablespoons of ground cinnamon, 2 tablespoons ground cardamon, 1 tablespoon of ground cumin) Mix in a bowl and save the rest for other recipes.

Preheat oven to 350F
Break eggs into large bowl. Add baking poweder, persian all spice, salt and pepper. Beat with a fork. Add garlic, chopped herbs, and flour. Mix. Adjust seasoning to your taste.

Pour ¼ cup of oil in an 8 inch ovenproof baking dish and place it in the oven for 10 to 15 minutes. Pour in the egg mixture and bake uncovered for 30 minutes. Remove the dish from the oven and gently pour the remaining oil over the kuku. Put the dish back in the oven and bake for 20 to 30 minutes longer, until golden brown.

Cut the kuku into small pieces and serve hot or cold with lavash bread or rice.
