Thai Hot-and-Sour Fish Soup recipe (Soup)

2 lb swordfish steaks
2   tomatoes
1/3 cups cilantro leaves
1 tablespoon cooking oil
3   shallots
1 tablespoon fresh ginger
5   jalapeño peppers
1 can chicken broth
2 cups water
½ lb mushrooms
5 tablespoons lime juice
¼ cups Asian fish sauce
some   Grated zest of 2 lemons
some   Grated zest of 3 limes

Heat the oil over moderately low heat. Add the shallots, ginger and jalapeños; cook, stirring occasionally, for 3 min. Add the broth and water; bring to a boil. Reduce the heat and simmer for 5 min. Stir in the zests and mushrooms; simmer 5 min. longer. Add the lime juice, fish sauce, and swordfish to the soup. Cook about 2 min. Serve sprinkled with the tomatoes and cilantro.
