Panko Crusted Mushrooms recipe (Side Dish)
Heat the vegetable oil. In a small bowl, lightly beat the eggs with a fork. Spread the panko in a shallow bowl.
Dip each mushroom into the beaten egg and let the excess drip off, then coat thoroughly with panko.
Carefully add 4 of the panko-coated mushrooms to the hot oil and fry over moderately high heat until golden brown.
Transfer the fried mushrooms to a wire rack set over a baking sheet to drain.
Repeat with the remaining mushrooms. Season with salt and serve the mushrooms immediately.
