Mustard Glazed Christmas Ham recipe (Meat)

YOU'LL NEED
Yield: 12 servings

9 lb corned ham
2   carrots
2   rib celery
2   bay leaves
5   white peppercorns
2   peeled onions
12   whole cloves
½   mild Swedish mustard
2   egg yolks
6 tablespoons honey
3 tablespoons bread crumbs
some   coarse mustard

Instructions

Place a 9-pound corned ham in a large pot. Add peeled carrots, celery, bay leaves, white peppercorns, and peeled onions, each studded with 6 cloves. Cover with water, cover pot, and simmer over lowheat, skimming occasionally, for 3 hours. Remove meat from broth and place on a cutting board. Cut away and discard rind. Preheat oven to 325F. Combine Swedish mustard, egg yolks honey in a bowl and mix well.
Place ham, fat side up, on a rack set in a roasting pan. Glaze top of ham and bake for 25 minutes. Increase heat to 400°F and cooking, basting with glaze, for 15 minutes. Sprinkle with 3 tablespoons fine bread crumbs and bake until golden, 15 minutes. Cool, then slice. Serve with coarse mustard.
