Baked Sweet Potatoes with Bourbon recipe (Casserole)

Yield: 4-6 servings

5   sweet potatoes or large can
1 tablespoon butter
some   dark brown sugar
2   eggs, well-beaten
2 oz bourbon or rum

Preheat oven at 325 degrees.

1. Boil potatoes if not using canned. Peel while hot and mash.

2. Add remaining ingredients and place in buttered casserole; top with marshmallows.

3. Bake for 25-30 minutes. Check often
