Place 2 qt. bowl and mixer beaters i the freezer
1. Put cream in chilled bowl and then place that bowl in a larger bowl that has cold water in it.
2. Run the mixer at medium high until cream starts to thicken.
3. Sprinkle in the sugar and add the vanilla, if using.
4. Set the mixer on high and continue until the cream holds soft peaks.
Mixing can take up to 15 minutes with a hand mixer
