Syrian Rice recipe (Side Dish)


2 cups rice
2 cups dried apricots
1 cup white raisins
½ cups butter
1 cup minced onions
½ cups green bell pepper
½ teaspoons curry powder
1 cup toasted almonds

Cover and soak to plump apricots and raisins for 30 min. Cook rice. Preheat oven to 375°F. Melt butter in a skillet; saute onion and pepper, add curry powder towards end. Mix in toasted almonds, apricots, raisins and cooked rice. Put into a greased baking dish to bake at 375°F for about 30 min.
