Instructions
In large bowl mix together spinach, tofu, egg, basil, oregano salt and pepper. In a medium saucepan over medium high heat, saute onion and garlic in oil about 2 minutes. Add tomatoes; cook about 5 minutes. Salt and pepper to taste. Cool slightly. Preheat oven to 350.In a 9 by 13 inch pan, spread a layer of tomato sauce mixture to cover bottom. Lay down a layer of lasagna noodles (about 4) over sauce. Spread a layer of spinach mixture over noodles to cover; sprinkle with cheese. Repeat until all ingredients are used, ending with cheese. Cover pan with foil; bake 35 to 40 minutes.
