Spinach Lasagna recipe (Main Dish)

10 oz frozen spinach, thawed and squeezed
2 lb firm tofu, drained & crumbled
1   egg
½ cups chopped basil
½ teaspoons oregano
½ teaspoons salt
¼ teaspoons pepper
1   onion, minced
1   clove garlic, minced
3 tablespoons olive oil
28 oz can crushed tomatoes
some   salt & pepper
1 lb lasagna noodles
some   mozzarella cheese, grated

In large bowl mix together spinach, tofu, egg, basil, oregano salt and pepper.
In a medium saucepan over medium high heat, saute onion and garlic in oil about 2 minutes. Add tomatoes; cook about 5 minutes. Salt and pepper to taste. Cool slightly.
Preheat oven to 350.In a 9 by 13 inch pan, spread a layer of tomato sauce mixture to cover bottom. Lay down a layer of lasagna noodles (about 4) over sauce. Spread a layer of spinach mixture over noodles to cover; sprinkle with cheese. Repeat until all ingredients are used, ending with cheese.
Cover pan with foil; bake 35 to 40 minutes.
