Pumpkin Pasta recipe (Pasta)


400 g pasta
½ kg pumpkin
4 tablespoons tomato paste
½ cups chicken stock
1 tablespoon oil
3 tablespoons sour cream
1 tablespoon chilli powder
some   salt and pepper

Put the pasta on to cook. In a decent sized pot fry up the pumpkin in the oil until it softens. It takes about ten minutes until it starts to break apart easily.
Add the tomato paste, sour cream and chilli powder and combine well. Stir through the stock and have a taste!
Add your salt and pepper.
Serve over your freshly cooked pasta. Top each serving with Parmesan cheese.
