Portuguese Chicken With Peas recipe (Casserole)


2 lb chicken, cut into pieces
2 tablespoons olive oil
1 tablespoon butter
1   sliced onion
6 oz chicken stock
2 oz dry red wine
1 lb frozen peas
some   salt and pepper

Heat the butter and the oil together in a heavy casserole.
Add the onion and cook until transparent.
Put the chicken in the casserole and lightly brown on all sides.
Add the onion, stock, wine, salt and pepper.
Cover and cook over low heat until the chicken is done, about 1 hour.
Before the chicken is done, add the peas and heat through.
