Instructions
In a 10 to 12 inch frying pan, heat oil over medium-high heat. Add onions, garlic, chillies. Saute until onions are soft and transparent.In a large bowl, combine onion mixture with chili powder, drained beans and salt. In a large deep greased baking dish, layer the ingredients as follows: .5 of the corn chips on the bottom of the pan, then .5 of the enchilada sauce, .5 of the olives, and all of the bean mixture. Repeat the layering with the remaining corn chips, sauce, olives and cheese on top. Bake uncovered in a 350° oven for 25 to 30 minutes or until hot and bubbly.
