Greek Fusilli Salad recipe (Pasta)


Yield: 4 servings

2 cups fusilli multi-colored pasta
1/3 cups olive oil
2 tablespoons chopped fresh oregano
2 tablespoons lemon juice
some   salt and pepper
2   deced plum tomatoes
½   English cucumber
8 oz feta cheese
1 cup pitted kalamata olives
some   cubed red onions

In a small bowl, mix together the olive oil, lemon juice, and oregano. Season to taste with salt and pepper. In a salad bowl, combine the fusilli, tomatoes, cucumber, feta cheese and olives. Add the vinaigrette; mix well. Add the red onions and serve.
