Christmas Pudding recipe (Dessert)
Grease a 1 liters pudding basin and place a piece of grease-proof paper in the bottom. Mix the butter and sugar in a large bowl. Beat the eggs in the bowl and then stir in the flour and breadcrumbs. Add cinnamon, orange rind and juice, dried apricots, sultanas, raisins, carrot and half of the whiskey and mix them well. Cover the bowl with double piece of grease proof foil and a single piece of kitchen foil and tie well with a string. Steam the pudding for 2 hours. Let the pudding stand for 15 minutes and then flame with the remaining whiskey.
