Chicken & Cabbage recipe (Poultry)


Yield: 2 servings

6 oz chicken breast, sliced
¼   head of cabbage, lightly steamed
½   onion, chopped
2   bacon slices, diced
1   zucchini, sliced
½ cups mushrooms
olive oil
black pepper
caraway seeds

Saute bacon in large skillet. When bacon starts to brown, add onion, zucchini, & mushrooms. Cook until bacon is crispy & vegetables are tender. Remove from skillet. Place chicken in skillet, seasoning, and adding oil if necessary to prevent sticking. When chicken is cooked through, add hot, steamed cabbage to skillet & season more to taste. As flavors begin to incorporate, add bacon-veggie mix to skillet. Toss in skillet & serve hot. I sometimes like to add a pat of butter.
