InstructionsCombine yellow cornmeal, flour and Cajun seasoning in a pie plate or shallow dish. Dredge catfish fillets in cornmeal mixture. Melt butter in a large nonstick skillet coated with cooking spray over medium-high heat. Add catfish fillets, and cook 5 minutes on each side or until fish flakes easily when tested with a fork. Remove catfish fillets from skillet; set aside, and keep warm. Combine coleslaw and dressing in a bowl; stir well. Cut rolls in half horizontally; spoon ½ cup slaw over bottom half of each roll. Top each with 1 fillet and tops of rolls. |
