Carolina Catfish Sandwiches recipe (Lunch)

Ingredients

6 oz catfish fillets (2)
oz French bread sandwich rolls
cups cabbage-and-carrot coleslaw
tablespoons yellow cornmeal
1 tablespoon light coleslaw dressing (such as Marzetti)
1 tablespoon all-purpose flour
teaspoons butter
1 teaspoon Cajun seasoning

Instructions

Combine yellow cornmeal, flour and Cajun seasoning in a pie plate or shallow dish. Dredge catfish fillets in cornmeal mixture.

Melt butter in a large nonstick skillet coated with cooking spray over medium-high heat. Add catfish fillets, and cook 5 minutes on each side or until fish flakes easily when tested with a fork. Remove catfish fillets from skillet; set aside, and keep warm.

Combine coleslaw and dressing in a bowl; stir well. Cut rolls in half horizontally; spoon ½ cup slaw over bottom half of each roll. Top each with 1 fillet and tops of rolls.
