Instructions
How to bake calamari Preheat oven to 180°C. Line a large baking tray with baking paper. Place the egg whites and ¼ cup water in a medium bowl and whisk to combine. Spoon the cornflour and breadcrumbs into two other separate medium bowls. Toss the calamari rings in the cornflour, then the egg-white mixture, then the breadcrumbs. Lay the prepared rings onto the baking tray. Spray well with vegetable oil spray. Bake for 15–17 minutes, until golden. Meanwhile, make the tartare sauce. Process the egg yolk, vinegar and sugar in a food processor for 30 seconds, until smooth. Add the yoghurt and process for 30 seconds. Transfer to a small bowl and stir through the gherkin, capers and green onion. Serve with the calamari and a green salad.
